NUTR 410 - Management and Leadership in Nutrition and Dietetics

Prerequisite: NUTR 310

Credit Hours: (3) Four hour lecture

Presents the basic principles and current practices of foodservice management. It is the second part of a two-course sequence building from NUTR 310.

Topics include:

  • Management theories and functions
  • Leadership approaches
  • Nutrition informatics
  • Human resource management principles and environment
  • Performance improvement
  • Financial management
  • Business plan development

 

Detailed Description of Conduct of Course

Course instruction strategies may include, but will not be limited to, lecture, discussion, class activities, problem-based learning, case studies, videos, guest speakers, and student presentations.

 

Goals and Objectives of the Course

Successful completion of the course will enable the student to:

  1. Describe management theories and how these apply to various settings for the dietetics professional.
  2. Describe leadership theories and skills and how these apply to various settings for the dietetics professional.
  3. Describe work settings and career opportunities for management and leadership positions for the dietetics professional.
  4. Plan, schedule, control and evaluate food production operations.
  5. Apply basic management theories and functions to foodservice systems.
  6. Identify appropriate styles of leadership for given circumstances.
  7. Describe the responsibilities of management regarding human resources.
  8. Identify and apply various models of performance improvement.
  9. Describe the terminology, tools and steps involved in basic financial management.
  10. Describe the steps involved with creating a business plan for food and nutrition related operations.

 

Assessment Measures

Assessment measures may include, but will not be limited to exams, assignments, projects, case studies, and oral presentations.

This course fulfills in part, the requirements for the Didactic Program in Dietetics accredited by the Accreditation Council for Education in Nutrition and Dietetics.
