1/2 teaspoon ground red pepper
3 large egg whites
1 1/2 cup shredded coconut
Pineapple juice (optional)

Peel and devein shrimp if necessary. Leave tales intact.
Combine cornstarch, salt, and red pepper in a shallow dish.
Beat egg whites in separate bowl until frothy.
Place coconut in third shallow dish.
Dip one shrimp at a time into the cornstarch mixture, egg whites, and coconut.
Bake on greased cookie sheet for 10 minutes at 400 deg
Flip and continue baking for an additional 10 minutes.
Notes: We recommend sprinkling pineapple juice on shrimp before and after
flipping.
Cost saving tips: Buy unpeeled shrimp. Try this recipe with chicken.
Side: Summer Salad
(Recipe courtesy Rachel Pastirik)
Ingredients:
1 10oz bag prepackaged salad
1 can mandarin oranges
1 cup sliced almonds
1/2 cup raspberry-vinaigrette dressing
1/2 cup honey
Directions:
Empty salad bag into medium serving bowl.
Drain mandarin oranges and add to salad.
Add almonds.
Mix raspberry-vinaigrette and honey well before adding to salad.
Shake or stir salad ingredients
Notes: We recommend a leafy green lettuce like romaine. Add chicken to this
salad for a quick and healthy meal.
Side: Easy Bread
Looking for a quick bread recipe? Whim recommends buying a bread maker mix.
It will include all the ingredients, including the yeast. Mix the ingredients;
dough will need to rise for about an hour, and then bake like normal. No bread
maker required!
